The Role

The Head Chef will adequately plan menus in consultation with both Manager and consultant Dietitian to ensure nutritional needs of elders are met. To ensure training needs and instruction of kitchen staff is adequately met.  To ensure catering supplies are ordered, maintained and stored in an appropriate manner and according to all relevant

regulations, meeting food safety requirements. To ensure food is appetizing and reflects the elders’ preferences.

  • Provide individual nutrition and hydration as per the Care Plan and food safety requirements
  • Provide meals which are appetizing and reflects the residents’ preferences
  • Be responsive to residents needs
  • Ensure the cleanliness of kitchenettes is maintained at the required standard set by MiCare

What We’re Looking For

 

Qualifications

  • Certificate IV Commercial Cookery
  • Statement of Attainment - Food Safety Supervisor
  • Diploma Hospitality Management preferred but not essential
  • Post graduate qualification relevant to the role and function of this position

Experience

  • Experience with food service, food handling and/or catering within a Community or Residential Aged Care setting for 180 plus people preferred
  • Previous experience in maintaining an efficient meal service for elderly people with high nutritional value
  • Knowledge of specific dietary requirements for the elderly
  • Experience with fresh onsite cooking as well as cook-chill services
  • Experience in training food handling staff
  • Broad experience working within Health Regulations, Food Safety Act, WH&S, Quality and Environmental legislative frameworks
  • Broad understanding of the Aged Care legislative framework, Aged Care Quality Standards with Aged Care sector and Residential Care experience preferred

Essential skills

  • Ability to work in accordance with and ensure compliance with Health Regulations and Food Safety Act
  • Liaise with and put into practice recommendations made by the dietitian
  • Review and participate in audits of food handling procedures across MiCare
  • Skilled in preparing, handling and presenting food to a high standard while maintaining strict food safety and hygiene practices
  • Committed to delivering person-centred food service that supports residents’ health, dignity and enjoyment
  • Assist in the catering for large offsite functions such as the Annual Holland Festival
  • Ability to cook a variety of meals
  • The ability to accept and provide clear direction to staff and to work with minimal supervision
  • The ability to lead, motivate and inspire the team within the established MiCare People Leadership framework and to facilitate Probation Reviews and Annual Career Development Reviews
  • Demonstrated ability to identify competency gaps and develop and implement tailored training, coaching, and mentoring plans to address and close those gaps
  • A flexible, caring and patient attitude
  • Flexible and resilient, with the ability to manage time, prioritise competing demands, adapt effectively within a changing environment and manage competing demands
  • A demonstrated willingness to work as part of a team and to promote harmonious workplace relationships with other employees
